Reuben Hills - Surry Hills

Welcome to Reuben Hills, a small roaster who in third wave specialty coffee terms, has been around forever. When Reuben Hills opened in 2012, there wasn’t much in terms of specialty coffee in Sydney. There was Mecca - last weeks drop - and Single O - somewhere we will visit in the future. With this in mind, they opened with the intent to bring more specialty coffee to the Sydney market.

I spoke to Aaron, their wholesale manager last week. He said:

‘We have a straightforward and honest approach to sourcing our coffee. Our aim is to support our farmers who follow best practice and provide us with delicious coffee year after year. Our farmers dictate the price per pound not the other way around. This price ensures they’re running a sustainable and healthy business - Fairer Trade.’

As I continue to talk to different specialty coffee roasters, I’m becoming to realise specialty coffee is far more about the flavours in the cup. What is just as important to these roasters are the sustainability of their product. Both on the environmental and ethical fair trade fronts. As said by Aaron, Reuben Hills is no different.

Rosma 3, Guatemala


Fredy inherited his fathers farm -Finca Rosma- 20 years ago. Through hard work and dedication he built the necessary infrastructure to grow coffee. Harvesting water from a natural spring, Finca Rosma is a completely sustainable coffee farm which also provides housing, schools and medical assistance to all of his employees.

Variety - Bourbon, Typica, Catuai, Caturra

Process - Washed

Flavour notes - Cocoa, Port, Stonefruit


Kagere AA, Kenya

Kagere is from the Nyeri region of Kenya. Most of the coffees from this region develop and mature slowly, producing extra hard beans. This slow maturing transforms to quality in the cup. The quality coffee from Nyeri has earned it the traditional title as ‘the heart of Kenya’s black gold coffee’.

Process - Fully washed

Flavour notes - Redcurrant, Plum, Citrus



Espresso - 9 bar

Brew ratio - 1:2 (dry coffee : espresso liquid)

Temp - 94 Deg C

Time - 25-30 seconds.

*Adjust grind size to achieve the desired time


Espresso - 6 bar

Brew ratio - 1:2.5 (dry coffee : espresso liquid)

Temp - 94 Deg C

Time - 25-30 seconds.

*Adjust grind size to achieve the desired time



Temp - off the boil

Ratio - 1:17(dry coffee:water)

Bloom - 30 seconds

Flow rate - fast

*Adjust grind size to achieve desired flow rate


Temp - off the boil

Ratio - 1:16 (dry coffee : water)

Bloom - 30 seconds

Brew time - 90 seconds (including bloom)

Press consistently over 15-20 seconds.
