Legend - Gosford

This week we visit Legend as the first return visitor to drop. Since I only had 4 subscribers last time, I figured a rerun was in order. To those 4 subscribers, I doubt you’re disappointed. ;)

Pete and I first met in 2019 when he came to work with me briefly at Harvest Specialty Coffee. Back then, Legend was in its infancy. Battling with council approvals, Pete would spend his lunch breaks on the phone to his project manager to keep things moving along.

Pete was looking to take Sydney level specialty coffee north, a sentiment that has been carried throughout the Legend team. Fast forward 2 years and Legend has become the spot on the central coast for specialty coffee. Next time you're off to the hunter for a weekend, make sure you stop in to drop for a delicious brew and food to match.

Flavour notes - Milk chocolate, Peach cobbler, Fig jam

 

Worka chalbesa, Nicaragua

 

The Worka delivers a delicate, floral, classic washed Ethiopian profile with a juicy, citric edge. It's particularly lovely as a filter, and great as an espresso. Produced by Smallholder Coffee farmers is the Yirgacheffe region.

Flavour notes - Lavender, Candied lemon, Tangelo

San Sebastian AAA, Colombia



This one is one damn easy drinking coffee. It's super clean and sweet, with a bit of crisp acidity. We summed this up by saying green apple, lychee, and butterscotch. Perfect for espresso and filter. Produced by San Sebastian in the Hula region.

Process - Washed

Flavour notes - Lychee, Green apple, Butterscotch

 

Recipes

Espresso - 9 bar

Brew ratio - 1:2.5 (dry coffee : espresso liquid)

Temp - 94 Deg C

Time - 25-30 seconds.

*Adjust grind size to achieve the desired time

 

Espresso - 6 bar

Brew ratio - 1:2.8 (dry coffee : espresso liquid)

Temp - 94 Deg C

Time - 25-30 seconds.

*Adjust grind size to achieve the desired time

 

Pourover

Temp - off the boil

Ratio - 1:18 (dry coffee:water)

Bloom - 30 seconds

Flow rate - fast

*Adjust grind size to achieve desired flow rate

Aeropress

Temp - off the boil

Ratio - 1:17 (dry coffee : water)

Bloom - 30 seconds

Brew time - 90 seconds (including bloom)

Press consistently over 15-20 seconds.

 

Stove top

Ratio - 1-18 (dry coffee : water)
